Anzac biscuits recipe
Anzac Biscuits
2 cups rolled oats
1 cup caster sugar
1 cup brown sugar
2 cups dessicated coconut
2 cups plain flour
1 cup ground almonds
pinch salt
1/2 cup water
2 tbs golden syrup
4 level tsps bi-carb soda
250g butter
Preheat oven to 160 oC. Mix all dry ingredients in a large bowl.
In a saucepan, bring the water, golden syrup, bi-carb soda and butter to
the boil.
Add wet mixture into dry ingredients and combine well.
Roll the mixture into 'walnut' sized balls and place onto lined trays.
Press down slightly with a fork.
Bake for about 20 minutes or until golden.
Cool on a rack and store in an airtight container.
